Capilla del Fraile has a passion for its wine and its olive oil. And they are happy to share it with their visitors. After collecting the grapes by hand in boxes, they are brought, in perfect condition, to the sorting table. To avoid breaking the grape seeds, they do not use crushes or aggressive extraction techniques. This helps make their wines full-bodied and amiable because of their well refined, full tannins. - CAPILLA del FRAILE´s extra virgin olive oil is extracted exclusively from olives rustically grown in their lands, all of which are geographically located in the region of Toledo, in central Spain. They use Piqual and Arbequina varieties.

THE OLIVE GROVE

Picual Olive Tree Age: 9 years
Arbequina Olive Tree Age: 8 years
System: Intensive planting in 7 m x 4.75 m frames, which results in a total of 302 trees per hectare. Irrigation and fertilization by drip method. Latest generation agronomic management techniques: no tilling, frequent analyses of soil and leaves, organic irrigation, pest prevention, continuous computerized control of soil humidity and fertility, among other variables.
HARVEST: At the optimum point of ripeness, manual harvesting in 15 to 20 kg. boxes.
In stainless steel tanks at controlled temperature, with a prefermentative and a long postfermentative maceration to bring out all the color, structure, aroma and potential of the grape. Further, tanks to the maceration, pumping-over and passage operatios we perform, our wines boast a very high color intensity and a lot of extract.
AGING: 12 to 14 months in French Allier oak barrels which are used a maximum of three times. The filtration process used is very gentle to maintain all the properties of the wine in the bottle.
AGING IN BOTTLE:
The wine awaits one year in the bottle placed horizontal so that the cork stays humid by the wine.
THE OLIVE OIL MAKING
CAPILLA del FRAILE´s extra virgin olive oil is extracted exclusively from olives rustically grown in our lands, all of which are geographically located in the region of Toledo, in central Spain.
CAPILLA del FRAILE´s olive mill has been recently constructed and it is unique in the word because of the cutting-edge technology and the quality of its mills, these use a system of adjustable cuts to crush the fruit.
At the onset of ripening, or veraison. The clusters are picked manually using electric stripping rakes for olives, which do not damage the tree or the fruit. All the olives harvested during a given day are milled on that same day, since the oil mill is located on the estate itself; this avoids any oxidation of the fruit.
At The first step is an exhaustive cleaning of the olives, followed by milling in oil mills that use a system of adjustable cuts to crush the fruit. The resulting olive paste goes into the mixers that, as a peculiarity of the Capilla del Fraile olive mill, are vertical, self-cleaning and hermetically sealed, characteristics that make them unique in the world, and that prevente paste oxidation. In these mixers the paste is homogenized at a constant temperature, always moderate. The third step involves separating the olive solids (pomace) from the liquid, which is accomplished in a decanter, using only physical, and never chemical processes so as not to damage the fruit. And finally, before storage, a centrifuge is used to separate the oil from the water naturally contained in the olive.
Once the olive oil is ready, we store it in stainless steel tanks with nitrogen, an inert gas used to prevent the oil from oxidating. It is bottled to order so that the oil maintains all its qualities.
