This winery hotel in perfect for the exclusive
gourmet traveller. Elegant and sophisticated, it integrates the
tradition of its location, an Andalucian farm house from the XVII
c., with a modern and minimalist interior. The result is a dream
place in the ”Serranía of Ronda”, at the foot
of “Sierra de las Nieves”, and just at 1 km of the
historic and monumental city of Ronda. It offers to its guests
a environment suitable to relax a few days surrounded by natural
and cultural beaty as well as many other incentives.
The
Hotel is an old noble house from the end of the XVIII century,
dedicated to wine production, which over 200 years has undergone
various modifications, the last one in the year 2001 has converted
the country estate “El Juncal” into a Hotel- Cellar,
occupying an extension of 8000 m2.
El Juncal breaks the concept of rural ambient, making a contrast
with the traditional and the modern, they conserve the original
structure combined with an avant-garde interior atmosphere characteristic
of the minimalist architecture: straight lines and white walls
that play with the lights, combined with a designed decor in pastel
shades, gives the result of a suitable ambient: warm, comfortable
and pleasant. The eleven rooms have the same style but a different
layout,
each one with
a distinctive touch. Surrounded by a garden, in which the original
vegetation has been conserved, there is the swimming pool, the
sauna and Jacuzzi, where the guest will find quiet corners to
relax.
The
kitchen of the Hotel, advised by “Tragabuches”
and managed by Paqui Castaño, is defined as a cuisine with
local products that pays special attention to the gastronomy of
our zone, using raw materials of excellent quality and elaborating
them according to traditional methods.
THE
WINERY
Located
in an old press and integrated in the Hotel, the winery has a
tank capacity of 70.000 l. They use French and American new oak
first year barrels. The prestigious enologue Ignacio de D. Miguel
Poch gives his advice about the winery and the vineyards, while
D. Jose Antonio Alía Muñóz is the technical
director.
They
only elaborate red wine proceedings from their own vineyards:
young and barrel aged wine depending on the characteristic of
the grapes. The wines are elaborated as mono-variety, making afterwards
the mixture or blending. The vineyards are situated in four plots
with different agro-climatic characteristics, some with the best
views of the Ronda Tajo, holding a total area close to 10 Hectares.
The varieties used are all red, Cabernet sauvignon, Cabernet Franc,
Merlot, Syrah, Petit Verdot and Garnacha. 
All
the production of the vineyards is focused to obtain quality red
wines which greatly limit the production of grapes in the field,
with a first selection of raw material in the plot and then a
second selection at the entrance in the cellar. Both the vineyards
as the winery are included in the Denomination of Origin Sierras
of Málaga, sub-denomination Serranía of Ronda.
The wine: Pasos Largos 2002
They
just have released to the Spanish market 4000 bottles of this
new wine. Pasos Largos was the nickname of one of the bandits
who used to work with Tragabuches. Manuel María
López owner of the winery and the restaurant Tragabuches
in Ronda is committed to save the old tradition of the bandits
of the Serranía of Ronda. We could say that Pasos Largos
and Tragabuches are both riding again, but now it is more about
gastronomic pleasure.
