This
winery inaugurated in 2003 is located in a restored XIX
century wine cellar. It represents modernity and renovation
in the center of the traditional region of La Mancha. Their
goal is to make excellent wine using their own vineyard,
tradition and the most advanced state-of-the-art winemaking
technology. Their wines are commercialized under the denomination
of origin Vinos de la Tierra de Castilla.
They
are very pleased to show the winery and offer their wines
to anybody who wants to pay them a visit. They want their
winery to be a meeting and learning space for wine lovers.
Their proposal is VINADEMUS a comprehensive
wine course offered in 5 sessions in the same winery. 
They
have 120 hectares of vineyards that cultivate: Garnacha,
Tempranillo, Syrah and Cabernet Sauvignon for making red
wines, and Airen, Chardonnay and Moscatel for making white
wines. An innovative restructuring program will replenish
Castiblanque’s old vineyards with newer, nobler grape
varieties, limiting production to increase quality. They
pay a lot of attention to grape control in the vine with
a meticulous monitoring of the field’s maturation.
Their aging cellar can hold 1000 barrels and they also have
an
aging
cave with capacity for 500 barrels and 100.000 bottles.
One
of Castiblanque’s most revolutionary innovations was
the centralization of production, elaboration and marketing
of its wines all within the same company. Therefore, maintaining
complete control of our products from start to finish and
watching over all phases that quality winemaking demands.
They
produce two lines of wine, the younger Ilex with whites
and reds, and Baldor, only red aged wines.
The
winery can be visited but it is necessary to make an appointment.
