Casa Pancho is one of the best tapas and wine bars in Burgos (tapas are also called pinchos in this part of Spain). It is very close to the Plaza Mayor, located in a street with many other tapas bars you can do a good tapas tour there. Although everything is very good here, there are some famous bar specialties like tigres (stuffed mussels breaded and fried), cojunudo/a (a small quail egg with a piece of sausage and pimiento on top of bread), mushrooms, stuffed pimientos, etc. You can see their tapas displayed in the counter, as well as advertised in large boards in the wall with the corresponding prices.

At the bar they have a great variety of wines by the glass from different Spanish wine regions and for all different taste. Selection is frequently changed.

Service is outstanding; the Perez Terradillos family and the waiters are extremely nice and attentive with everybody. Even when the bar is very busy, they see you coming through the door, take your order, and you have your wine and tapa in a moment. They friendliness, and personal treatment is the best ingredient for their tapas.

And if you want to sit down for your meal, there are two areas with tables where you can have tapas or a full meal. You can eat a la carte, or have the menu of the day, always an excellent value. Some tables are located behind the counter at the street level, where you can hear all the bustling and atmosphere of the bar. The other area is quieter, on the first floor. In this first floor they also have a wonderful temperature controlled cellar with capacity for about thousand bottles. This is why their wine list is so impressive, with multiple references, even from outside Spain.
