Throughout the process the grapes are only moved by the force of gravity, with no use of pressure or pumping of any kind which could harm the final result. Some
of the processes, recuperated from past tradition, such
as allowing the grapes to fall by the force of gravity
and the excavation of the cellar underground, are signs
of intelligence at the service of the final result.
Wines such as Campo Viejo , Alcorta , Azpilicueta or
Marqués de Villamagna , are fine examples of
this.
